Eggs

Zucchini pancakes

Ingredients for 2:

1.25 lb zucchini
4 tbsp cream wheat
2 eggs
Salt, sugar, flour on taste
3 tbsp vegetable oil


Method:

Grate zucchini, add cream wheat, egg yolks, salt and sugar.
Add flour if necessary (if dough is too thin).
Whip egg whites with 1 pinch salt.
Mix dough and whites.
Pre-heat a skillet with vegetable oil.
Cook zucchini pancakes like usual ones.
Serve with sour cream.

Profiteroles Picante

Ingredients:

For Dough:
0.5 stick butter (25g)
0.2 lb flour (75g)
2 eggs
Salt on taste
Butter and flour to grease and to sprinkle a baking sheet
For cheese cream:
1 hard-boiled egg
2 tbsp Brynza cheese (or Feta)
3 tbsp sour cream
1 tsp thinly cut Italian parsley
Salt and fresh-grated pepper on taste
For ham cream:
0.2lb ham (75 g)
2 tbsp sour cream
1 tsp Grand Marnier

Other tvorog dough

Ingredients:

1.25 lb tvorog
3 eggs
1 cup vegetable oil
1 cup sugar
2 packs baking powder
1 pack vanilla sugar
1.5 lb all-purpose flour

Method:

Grind tvorog, add all ingredients except flour, and blend.
Continue blending, adding flour by the tablespoons.
Knead the dough until it ceases sticking to the hands. Let sit 2 hours in a warm place.
Divide it into same-size-parts, roll out, fill with chosen fillings, pinch closed.

Tvorog dough

Ingredients:

0.5 lb tvorog
2 eggs
1 tbsp sugar
Pinch of salt
Pinch of baking soda
7 tbsp all-purpose flour

Method:

Knead all ingredients together.

This dough is good for small pies cooked in a fryer with a variety of fillings (potato filling, meat, liver, or sweet ones).
Or, you can add more sugar, and just fry small balls.
Or, you can add small cuts of fresh plums, apricots, etc., to the dough, and fry small balls.

Lazy cutlets

Ingredients:

1 lb meat
1 tbsp potato flour
2 tbsp mayo
1 egg
Salt, spices (dill, basilica), on taste
Onions (optional)

Method:

Grate frozen meat (or cut into very small cubes), it does not take a lot of time.
Mix flour, mayo, egg, salt, and spices.
Add meat, and mix well.
Let sit for about 1 hour, or more.
Pre-heat skillet, and cook cutlets like pancakes. Fry both sides until golden crust, and then steam them for 5 minutes on the skillet under a lid.

Sour Cream Pie with smoked fish

Ingredients:

2 smoked fish
1 shallot onion
1.25 lb sour cream
3 eggs
2 tsp baking powder
1 cup flour
1 cup grated cheese
1 tbsp butter

Method:

Take boneless, skinless fish fillets, cut into medium cuts.
Peel and cut onions thinly.
Whip eggs, sour cream, and salt for 2-3 minutes.
Mix flour and baking powder.
Blend flour and egg-sour cream mix together, to get thin dough.
Let it sit for half hour in a warm place.

Cutlets "Crimea"

Ingredients:

2.5 lb turkey breast
0.5 lb grated nuts
0.25 lb butter
2 eggs
1 shallot onion
Garlic, greens, and salt on taste
Flour, bread crumbs

Method:

Cut onions, greens, and (optional) garlic.
Blend butter, grated nuts, greens, and (optional) garlic. Cool it.
Cut turkey breasts into slices; chop them to 1" thick.
Put butter mix in the center of every slice; cover the mix in the "envelope" of slices.

Appetizer "Mushrooms from eggs"

Ingredients:

4 hard-boiled eggs
1 can sprats (or other fish preserves)
2 tbsp mayo
Greens on your taste
0.5 cup strong boiling tea

Method:

Peel eggs; cut the top third of the whites.
Boil these “cups” in a strong tea until they turn brown color, light or dark, as you like.
Grate yolks, and cut sprats into small cuts.
Cut greens.
Mix yolks, mayo, greens, and sprats, and blend.
Fill the whites with this mix.
Sprinkle serving dish with greens.

Finnish Salad

Ingredients for 4:

2 salt herring fillets
½ lb cold boiled beef
4 cold boiled potatoes
½ lb pickled beets
2 medium pickled cucumbers
1 large shallot onion
1 hard-boiled egg
½ cup whipped cream
Apple puree on taste
Fresh-ground black pepper on taste

Method:

Soak fillets in water, tea, or milk for 12 hours, then dry and cut into small cubes.
Cut beets, peeled potatoes, onions, cucumber, beef, and peeled egg into small cubes.

Meat-egg salad

Ingredients for 2:

3 eggs
1 large shallot onion
0.5 lb beef
2 tbsp vegetable oil
½ tsp salt
Pepper, mayonnaise on taste

Method:

Whip 3 eggs with 1/3 tsp salt.
Cook thin crepes from whipped eggs on a preheated skillet.
Roll them tightly and set them aside.
Make a julienne cut of beef, fry it for 3-4 minutes on a pre-heated skillet with vegetable oil, stirring occasionally.
Peel and cut onions into half-rings, fry them on a pre-heated skillet until gold color.
