Grandfather’s Salad

Note: This salad is good to feed a large family, and very easy to make.

Ingredients for 4:

1 lb any Bologna
1 lb tomatoes
1 lb English cucumber
1/3 cup mayonnaise
Salt on taste

Method:

Cut Bologna into medium cubes, put in a large deep enameled or glass dish.
Cut tomatoes and cucumbers as you like, put in the dish.
Add mayonnaise and salt, mix well.

Quick pie

Ingredients:

3 cup flour
0.5 cup sour cream
0.5 lb butter or margarine
2 eggs
Salt on taste
1 tbsp sugar
1 tbsp butter
0.5 tsp baking soda
Any filling

Method:

Make dough with all ingredients except for the filling.
Grease a baking form with 1 tbsp butter.
Pour all the dough in the form if you plan on an open pie, or 2/3 of the dough if you plan on a closed pie.

Place the filling evenly over the dough.

Belorussian Borzsch

Ingredients for 4:

1 lb beef soup bones
0.5 lb beef short plate
1 smoked sausage
2 medium potatoes
2 medium beets
1 carrot
2 tbsp onions cut into small cubes
2 tbsp tomato paste
1 tbsp pork fat
1 tsp sugar
1 tsp 3% vinegar
4 tbsp sour cream
Salt, pepper, bay leaves, parsley greens on taste

Method:

Place bones and beef into 1 qt hot water, bring it to boil, remove foam.
Cut carrots into julienne cuts.

Potato – Meat “Porks”

Ingredients:

2 lb potatoes
2 lb non-fat de-boned pork
3 eggs
¾ lb sour cream
1.5 qt milk
¼ lb wheat
4 tbsp butter
Salt in taste

Method:
Cut the meat into 1/3 inch x 1/3 inch x 1-inch pieces.
Pre-heat a wide skillet with 1 tbsp butter; put the meat on it, and fry for 4 minutes, stirring at medium heating.
Boil potatoes.
Make puree from the potatoes, warm milk, flour, 2 eggs, and ½ lb sour cream.

Southern Sweet

Ingredients:

3 cups wheat
1.5 cup sugar
2 tsp baking powder
8 tbsp butter
1.5 cup kefir( or buttermilk, or plain yogurt)
0.5 cup grated coconuts
Nuts on taste

Method:
Mix all the ingredients, except 2 tbsp butter.
Grease a round baking dish with 2 tbsp butter.
Pour the dough in it.
Pre-heat an oven to 180 C (360 F), and bake this dish for 25 minutes.
Mix ½ cup hot water, 1 tbsp lemon juice, and 1/3 cup sugar.
Bring it to boil.

Appetizer “Stoplight”

Ingredients:

3 hardboiled eggs
6 crabmeat imitation pieces
6 oz cheese
8 tbsp sour cream or mayonnaise
6 white, wheat, or rye bread pieces
1 bunch greens
1 clove garlic (optional)

Method:

Grate cheese and egg whites on a medium grater, mix with the sour cream or Mayo, and add (optionally) grated garlic clove.
Divide this mix into 3 parts.
Add grated crabmeat imitation to first one, blend well.
Add grated egg yolk to the second one, blend well.

Northern Style Fish

Ingredients:

1 lb fish fillets
1 lb boiled potatoes
1 large shallot onion
2 tbsp butter
1 tbsp flour
Greens on your taste (dill and bay leaves recommended)
Salt and ground black pepper on taste

Method:

Cut shallot onions and greens into medium-size pieces.
Fry them on a large skillet with butter for 2 minutes, add salt, pepper, and bay leaves.
Add 0.5 cup water into the skillet, and bring to boil.

Beet salad

Ingredients:

3 medium beets, boiled or baked
1 large shallot onion
1 garlic clove
Salt, sugar on your taste
1 pinch citric acid
2 tbsp vegetable oil

Method:

Peel onions. Cut into small cubes, place on a pre-heated skillet with vegetable oil, sprinkle with sugar, and fry for 3-4 minutes, stirring thoroughly. Add grated garlic, mix well, and turn heating off.
Peel and grate beets, place in the skillet with the onions.

Vegetable pancakes – common recipe

Ingredients:

1 lb vegetables (boiled in milk pumpkin, carrot, any cabbage, fresh or boiled potatoes)
2 eggs
½ cup buttermilk
1 tsp sugar (or more, for sweet pancakes)
1 tsp salt
Flour, to get thick sour cream dough’s consistency
Pinch of baking soda
4-5 tbsp vegetable oil

Method:

Make vegetable puree, or grate fresh vegetables.
Add eggs, salt, sugar, soda, and buttermilk, mix well.
Add flour, and make dough with a thick sour cream consistency.

Country Mushroom Soup

Ingredients:

0.5 cup dried mushrooms
1 cup pearl
6 medium potatoes
2 shallot onions
2 medium carrots
6 garlic cloves
3 tbsp vegetable oil
3 bay leaves
Dill on taste

Method:

Soak pearl in 3 cups water for 1 hour, then bring to boil, and boil for about 40 minutes, or until it is ready.
Grate mushrooms, put them in a microwave-safe dish, add 2 cups water, and cook for 10 minutes. Or, you can boil them on a top-oven for 40 minutes.
