Zapekanka with Pasta and Mushrooms

Ingredients:

1 pack any pasta
1 lb mushrooms
1 large onion
0.25 lb margarine or butter
0.25 lb breadcrumbs
0.25 lb cheese
2 eggs
0.5 cup milk
Salt and ground black pepper on taste.

Method:

Wash mushrooms, drain, then grate them, and cook in a skillet with margarine or butter stirring occasionally.

Peel and grate (or cut into very small cubes) onions, and cook them in another skillet with 2 tbsp of margarine, until the onions turn golden.

Sweet Rice Pilaf with Dried Fruits and Nuts

Ingredients:

1 cup long-grain white rice
2 tbsp currants
4 medium prunes
4 tbsp of butter
0.5 cup of dried apricots
1/4 cup of finely chopped silvered almonds
1 tbsp honey

Method:

Pit prunes, cut lengthwise into thin strips, and soak in a warm water for about 15 minutes, then drain on paper towels.
Soak currants in a bowl of warm water for 15 minutes, then drain them on paper towels.

Potato Pies with Cabbage

Ingredients:

1 lb potatoes
0.5 lb cabbage
1 medium onion
1 stick margarine or butter
2 eggs
0.5 cup flour
Salt and ground black pepper on taste

Method

Peel potatoes, boil in lightly salted water until done, and grind.
Knead dough from potatoes, egg, flour, and salt on a floured surface, then roll out and cut into pieces.
Make flat rounds. Shred cabbage, sprinkle with salt, and let stand.

Halvah from sunflower seeds

Ingredients:

2 cups peeled and fried sunflower seeds
1.5 cup flour
0.5 cup sugar
0.25 cup vegetable oil (sunflower oil preferably)
0.5 cup water

Method:

Grate sunflower seeds.
Fry flour on a dry skillet, stirring thoroughly until the flour changes color to creamy.
Then, mix flour and grated seeds well, and grate them together once more.

Pork with Oranges

Ingredients for 4:

2 lb pork neck boneless meat
3 medium oranges
Salt, pepper, other spices on taste
4 cup cooked rice

Method:

Wash the meat, and make about 1” deep crosscuts.
Sprinkle the meat with spices.
Cut oranges into medium slices.
Put a piece of foil on a baking sheet, then put 6 orange slices on it, and put meat over the oranges.
Put more orange slices over the meat, and wrap the whole thing in foil.

Simplest Fish Pate

Ingredients:

1 lb fish
2 tbsp flour
2 tbsp butter
1 cup milk or whipping cream
1 medium onion
1 celery stalk
1 dill stalk
0.5 parsley root
2 bay leaves
1 parsley stalk
1/3 lb margarine or butter
Salt and red pepper on taste

Method:

Put cleaned and washed fish in a saucepan, pour 1-2 cups of cold water over it, then add bay leaves, onions, celery, dill, parsley root, and bring to boil with small heating.

Appetizers with fish and vegetables

Ingredients:

2 sticks (100g) butter
3 eggs
1 cup flour
1 medium tomato
1 medium English cucumber
1/2 red sweet peppers
1 cup lightly salted steelhead (or salmon)
1 tbsp vegetable oil
1 tsp soy sauce
1/2 medium lemon
Salt and pepper for taste

Method:

Boil 0.5 cup water in a saucepan, add butter and let it to melt, then add flour by teaspoon, and knead dough. Let it cool, and whip quickly adding eggs by one. Whip until an even consistency.

Christmas Tree Cake

Ingredients:

For dough:
5 eggs
100 g sugar
150 g flour
2 tbsp butter or margarine (to grease baking shape)
Salt on taste

For crème:
150 g chocolate
250 g butter or margarine (warm to whip)
100 g sugar powder
4 egg yolks
2 tbsp rum or brandy

For decoration:
1 tbsp grated pistachios
Cherries, fresh or maraschino
Sugar powder
Salt on taste

Method:

Canapé with smoked salmon and caviar

Ingredients:

16 small toasts
16 tsp light sour cream
0.5 lb smoked salmon
1 can 3.5 oz red caviar

Method:

Divide smoked salmon into thin slices. Roll every slice into a cone, place 1 tsp sour cream in the middle of cone, place ½ tsp caviar over it, and put cone on a toast.
Decorate flat plate with greens and lemon slices, place toasts on the plate, and serve.

Goose Leg Cookies

Ingredients:

2.5 cup flour
250 g margarine
1 cup warm milk
2 eggs
1 tsp yeast
Salt, sugar, vanilla on taste

Method:

Grate margarine in a deep dish, add milk, yeast, salt, sugar, vanilla, sift all flour into the same dish, make a dough, and place in a refrigerator for 2 hours.
Pre-heat an oven to 200 - 220 C (400 – 420 F).
Divide the dough into 1/8 lb pieces, roll every piece into a circle shape, sprinkle with sugar in the middle, and fold twice.
