Blini’s Pie

Ingredients:

6-7 blinis (or crepes, or very thin pan-size pancakes)
1.lb ground meat
0.25 lb ground onions
0.5 tsp salt
Pinch of black pepper
3 eggs
3 tbsp sour cream
1-2 garlic cloves (optional)

Method:

Fry ground meat, stirring thoroughly to create small mild ground meat chunks, for about 5 minutes, until meat is ready.
Add the eggs to the meat chunks and continue to stir fry until eggs are ready and well mixed with the meat.

Butter cakes

Ingredients:

0.5 lb (or 250 g) butter
0.5 lb (or 250 g) sugar
2 eggs
1 lb (or 500 g) flour
0.5 tsp vanilla extract
1 tsp baking powder

Method:

Whip butter and sugar together.

Whip the eggs separately, and then whip them together with the butter and sugar mixture, adding vanilla.

Mix flour and baking powder together, and add them into whipped mix, stirring until even consistency but without a blender.

Sour Cream Cake

This is very popular in Russia kind of cakes. You can change creams, and get different taste.

Ingredients:

For the dough:

7 eggs
2 cups flour
1.5 cups sugar
1 tsp baking soda
1 tsp baking mix
Vanilla (a few drops)

For Sour-cream-based Cream:

1.2-1.8 lb sour cream (depends on thickness)
0.5 cups sugar
Vanilla

Chocolate cream:

1.5 cup whipping cream
1 lb grated chocolate

Grated Pie

Ingredients:

2-3 eggs
1 cup sugar
3 cup flour
1/4 tsp salt
1 tsp baking powder (or 0.5 tsp baking soda)
1/4 lb (125 g) butter or margarine
1 tsp vanilla sugar
1 cup sour jam

Method:

Whip eggs; add sugar and vanilla by teaspoon continuing whipping.
When this mix starts to clump, add melted butter or margarine, continuing stirring.
Divide the dough into 2 parts: 2/3 and 1/3.

Family Apple Pie

Ingredients:

For dough:
1 cup milk
2 eggs
0.25 lb margarine
3 tbsp sugar
1 tsp salt
1 pack dry yeast
4 cups flour

For stuffing:
3-4 lb crispy apples
1.5 lb sugar

Method:

Remove apple seeds and around them, and cut apples into thin slices.
Put them in an enameled saucepan.

Rice Zapekanka with Chicken Meat

Ingredients for 4:

2 cups boiled rice
0.5 lb grated cheese
1.5 cup boiled and grated chicken breast
350 ml milk
0.5 cup thinly cut red onions
2 eggs
0.25 cup thinly cut coriander
2 tbsp melted butter or margarine

Method:

Pre-heat an oven to 180 C. Grease a baking dish with butter or margarine.
Mix rice, cheese, chicken meat, onions, milk, and melted margarine together.
Whip the eggs, add to this mix, and stir well.

Sprats Salad – Cocktail

Ingredients:

1 can sprats
1 small lemon
3 medium boiled potatoes
2 hardboiled eggs
¼ lb grated cheese
Mayonnaise on taste

Method:

Cut sprats into small pieces using a fork, place in a salad bowl.
Cut lemon into small, thin parts, and place them over the sprats’ layer.
Cover with a very thin mayonnaise layer.
Peel potatoes, and grate them, then place them over the Mayo.
Cover the potatoes with a very thin layer of mayonnaise.

Apple-Rice Zapekanka

Ingredients:

1 lb apples
1/3 lb rice
½ cup sugar
½ stick (or 4 tbsp) butter
3 eggs
2 tbsp flour
Vanilla on taste
3 tbsp vegetable oil

Method:

Boil (non-sticky) rice to readiness and cool.
Peel apples, de-seed, and cut into medium cubes (or into thin slices).
Grease a baking sheet with vegetable oil, place the apples onto the sheet, sprinkle with 2 tbsp sugar.
Pre-heat an oven to 390º F (200º C), and place the sheet in the oven.

Chicken Sticks

Ingredients:

1 chicken breast
1 tbsp sour cream
0.5 tsp salt
Garlic, ground pepper (optional)
5 tbsp flour
7 tbsp vegetable oil

Method:

Cut breast (de-boned and de-skinned) crosswise into 5-6 parts, place them onto a bowl, add salt, pepper, garlic, sour cream, stir, and set aside for 10 minutes.
Pour flour in a wide flat dish.
Pre-heat a skillet with vegetable oil until oil is boiling.
Roll every chicken piece in the flour, and put in the skillet.

Fried Pattipats

Ingredients:

1 lb pattipat (ot squash)
1 cup flour
2 tsp salt
5 garlic cloves
5 tbsp Mayonnaise
5 tbsp vegetable oil

Method:

Peel pattipats, and cut into thin rings.
Sprinkle every piece with salt, then roll in flour evenly.
Peel and press garlic, and mix it with Mayonnaise thoroughly.
Pre-heat a wide skillet with 1 tbsp vegetable oil. Place some of pattipat’ rings on it.
