Christmas Tree Cake

Ingredients:

For dough:
5 eggs
100 g sugar
150 g flour
2 tbsp butter or margarine (to grease baking shape)
Salt on taste

For crème:
150 g chocolate
250 g butter or margarine (warm to whip)
100 g sugar powder
4 egg yolks
2 tbsp rum or brandy

For decoration:
1 tbsp grated pistachios
Cherries, fresh or maraschino
Sugar powder
Salt on taste

Method:

Canapé with smoked salmon and caviar

Ingredients:

16 small toasts
16 tsp light sour cream
0.5 lb smoked salmon
1 can 3.5 oz red caviar

Method:

Divide smoked salmon into thin slices. Roll every slice into a cone, place 1 tsp sour cream in the middle of cone, place ½ tsp caviar over it, and put cone on a toast.
Decorate flat plate with greens and lemon slices, place toasts on the plate, and serve.

Chicken-Mushroom-Cheese Salad

Ingredients for 5:

1/2 lb boiled with salt and greens chicken meat
1/4 lb brined, pickled, or salted mushrooms
1/2 lb grated cheese
1/4 lb canned green peas
1/2 cup sour cream
Horseradish, salt, pepper, greens and spices on taste

Method:

Cut chicken meat and mushrooms into small cubes. Mix sour cream with horseradish and spices.
Mix all ingredients, place in a salad bowl, and decorate with greens.

Goose Leg Cookies

Ingredients:

2.5 cup flour
250 g margarine
1 cup warm milk
2 eggs
1 tsp yeast
Salt, sugar, vanilla on taste

Method:

Grate margarine in a deep dish, add milk, yeast, salt, sugar, vanilla, sift all flour into the same dish, make a dough, and place in a refrigerator for 2 hours.
Pre-heat an oven to 200 - 220 C (400 – 420 F).
Divide the dough into 1/8 lb pieces, roll every piece into a circle shape, sprinkle with sugar in the middle, and fold twice.

Potato Biscuits

Ingredient for 8:

2 lb potatoes
1 cup milk
0.25 lb sour cream
3 eggs
1 lb spinach
2 tbsp tomato paste (or any tomato sauce)
1 tbsp sugar

Method:

Boil potatoes, then peel and make puree from the potatoes, milk, sour cream, and eggs.
Divide the puree into 3 parts.
Boil spinach for 2 minutes, then drain it and make puree from the spinach, and mix it with one part of the potato puree.
Add tomato-paste and sugar to another part of the potato puree, and blend.

Classic Calamari Salad

Ingredients:

1 lb calamari steaks
1 hardboiled egg
2/4 lb potatoes
0.5 lb carrots
1 cup boiled (or canned) green peas
1 medium brined (or fresh) cucumber
1 green apple
0.5 cup sour cream (or Mayo)
Salt, pepper, dill on taste

Method:

Bring water to boil, add 1 tsp salt, and boil the calamari steaks for 3 minutes, then place them in cold water for 1 minute, and de-skin.
Boil potatoes and carrots to readiness, then cool, peel, and cut into small cubes.

Chicken - Cheese Pie

Ingredients for 4:

1 pack puff pastry dough
4 chicken breasts
0.5 lb Feta cheese
Greens on taste

Method:

Roll dough, and cut into 4 rectangles.
Tenderize chicken breasts very well, sprinkle with salt and peppers.
Cut greens into very small pieces, and grind greens and Feta cheese together.
Cover every breast with this mix, and roll every breast tightly.
Place the roll on a corner of a dough rectangle, and flip the sides like an envelope, to avoid the cheese leaking.

Beef Steak with Onions

Ingredients for 1:

0.5 lb beef
1 tbsp margarine
2 tbsp sliced onions
1 tsp flour
1 egg
Salt on taste

Method:

Cut the meat into portions, if you prefer small steaks.
Tenderize the meat until it is less than 1” thick.
Fry the onions on small heating with margarine until the onions change color.
Sprinkle the meat with flour.
Fry the meat on a large heating with margarine for about 2-3 minutes per side.

Salad Vitamin

Ingredients for 4:

5 carrots
0.5 lb green cabbage
3 garlic cloves
Grated cheese
Dressing (plain yogurt, or kefir, or sour cream, or mayonnaise, or their mix)
Pomegranate seeds on taste

Method:

Grate washed vegetables, put them in a salad bowl, add grated cheese, dressing and pomegranate seeds, mix well, and serve.
