Simplest Fish-and-Potato Salad

Ingredients:

1 lb potatoes
1/3 lb boiled or hot smoked fish fillets (cod is very appropriate; a mix of different fish is acceptable)
1 large salt cucumber (or ¼ lb salt cucumbers)
1 medium onion
2 tbsp black olives – optional
1 hardboiled egg – optional
2 tbsp vegetable oil
Salt and fresh-ground black pepper on taste

Method:

Boil the potatoes, then cool and peel them.
Ground the potatoes, or cut them into small cubes.

"Furry” Salad

Ingredients:

1 can salmon in own juice
3-4 medium potatoes
0.5 cup ground walnuts
4 hard-boiled eggs
1 medium onion
0.5 kg ground cheese
1 sour apple
Mayonnaise on taste

Method:

Wash the potatoes, and boil them. Then, cool and peel.

Blend Mayonnaise with fish broth from the can until an even consistency is reached.

Press salmon with a fork until it crumbles into small pieces, and place them in a large salad bowl.

Russian Salad – 2

Ingredients:

4-5 boiled potatoes
½ lb boiled beef (de-boned, without fat)
2 hard-boiled eggs
1 medium apple
2 large salt cucumbers
1 small salt herring (or 4-5 large anchovies)

For dressing:

0.5 cup sour cream
1 tsp ground horseradish
2 tbsp vinegar
1 tsp mustard
2 tbsp dill and parsley greens, thinly cut

Method:

Soak the herring and anchovies if necessary (if they are too salted or too hot).

Herring in a Mustard Sauce

Ingredients:

1 l b herring filets Matties
1 large sweet onion
3 tbsp mustard
1 tsp sugar
2 tbsp olive oil
5 tbsp water

Method:

Cut herring fillets into strips, and place on an oval herring dish.
Peel onion, and cut into half-rings.
Cover the herring with onions.

Stir mustard with sugar until the sugar dissolves.
Blend this with olive oil until an even consistency.
Add warm water, and continue to blend until an even consistency.

“Herring under fur coat” Salad

This dish is so named for the airy layers covering the herrings.

Ingredients:

1 lb herrings fillets Matties (lightly salt, not brined, de-boned)
2 large beetroots
3 carrots
1-2 sour apples
3-4 hard-boiled eggs
Mayonnaise on taste

Method:

Boil beetroots in salt water (do not peel!) for about 45 minutes, check if they are mild with a knife. If not, boil for 15 more minutes, then place in cold water and let cool.

Stuffed Fish Baked in Foil

Ingredients for 1:

1 whole fish
4 medium onions
Salt, greens (dill, parsley, lemon) and spices (any lemon fish spice mixes) on taste

Method:

Cut greens into small pieces, cut peeled onions into half-rings.
Mix onions and greens.

Wash and clean the fish, remove head, fins, inners and black membranes. Rub the spice mix into the inside and outside of the fish.

Put the fish in the center of a piece of foil, and stuff it with a greens-onions mix.

Salmon soufflé

Ingredients:

0.5 lb boiled salmon fillets (or 1 can pink salmon)
1 lb warm potato puree
4 eggs
0.25 cup milk
1 onion
Salt, pepper, sweet red pepper on taste

Method:

Separate egg yolks and egg whites.

Blend fish fillets.

Cut the onions into small cubes.

Whip all ingredients but the egg whites together.

Grease sides and bottom of a soufflé oven-safe dish, and place the whipped mix into the dish.

Whip egg whites.

Salmon Marinated in Oranges

Ingredients:

1 lb salmon fillets
1 lb oranges
3 tbsp mustard
1 cup dill greens
Green salad leaves, tomato and mild cheese slices for decoration

Method:

Grate oranges (do not peel!).
Put the salmon fillets in the ground oranges, roll a few times, and place in a refrigerator for 12 hours.

Cut dills into small pieces, and mix with mustard.
Clean the oranges off the fillets, grease with the mustard-dill mix, and place in a refrigerator for 12 hours.

Northern Caviar Soup

Ingredients:

1 lb fish fillets
1 l (1/4 gallon) fish broth
1 large onion
0.25 lb caviar
Salt and spices on taste

Method:

Put fish in a fish broth, add salt on taste, and bring to boil.
Peel the onions, and cut into medium pieces.
Put the onions and spices into the saucepan with the fish.
Cook while removing the foam, for 10-15 minutes.

Take the fish fillets out of the saucepan, cut into serving portions, and set aside.

Cod liver – Tvorog Pate

Ingredients:

200 g (or 0.5 lb) tvorog
60 g (or 3 oz) cod liver, boiled or canned
4 hard-boiled eggs yolks
1 slice of white bread, soaked in water
Tomatoes and thinly cut parsley and dill greens for decoration
Salt on taste

Method:

Blend tvorog, cod liver, yolks, and bread until an even consistency.
Place in the middle of a flat plate; decorate with tomato rings and greens around the center, serve.
