Milk

Cheese-potato balls

Ingredients:

8 medium boiled peeled potatoes
3 sticks (by 50 g), or 6 oz butter
1 cup all-purpose flour
4 eggs
2/3 cup grated cheese, or tvorog
Salt and pepper on taste

Method:

Make potato puree.
Whip mild butter.
Mix all ingredients, and knead dough.
Make 2"-diameter dough balls, and cook them in a deep fryer (or on a heated skillet) until their color is gold. Dry with paper towels.

Appetizer with egg

Ingredients for 1:

1 hard-boiled egg
2 oz grated cheese
1/2 tsp mayonnaise
Tomatoes, fresh cucumber, garlic, parsley - for decoration, on taste

Method:

Cut egg into 2 halves.
Take out the yolk; mix it with grated cheese, garlic, and mayonnaise until even consistency.
Put the mix into a decorating (confectionary) bag, and fill the egg white halves using any piece.
Cut tomatoes and cucumbers in decorative shapes, cut parsley.

Tvorog

Tvorog is one of the most ancient and popular Russian dishes.
It was known in ancient Rome too, and one of philosophers, Columella, said that it is a favorable dish on a rich and poor table.
Tvorog is a well-balanced and useful dish, containing proteins, necessary amino acids, microelements, and vitamins. It is allowed-for-all dish, and it is absolutely necessary for children, because it contains plenty of calcium, and 14%-22% of protein. For a long time, Russians called tvorog "syr", which means "cheese", and even still pancakes with tvorog are named "syrnik".

Pie with cabbage and eggs

For dough:

2 cup all-purpose flour
1 pack (250 g), or 9 oz, tvorog
2 eggs
1/2 tsp baking powder
1 tbsp sugar
1/3 lb butter (or margarine)

For filling:

3 lb cabbage (or 2 lb sliced cabbage)
3 eggs
1 pack dill
1/2 cup milk
1 tbsp butter (or margarine)
Salt

Method:

Slice cabbage into short strips.
Heat skillet (or a wide, but not deep sauce pan), pour milk, and after milk is warmed up, add cabbage.

Sochniki

Ingredients:

For dough:

¼ lb melted margarine
2 egg yolks
4 tbsp sour cream
2 ½ cups wheat flour
1 cup sugar
Pinch of baking soda
Salt on taste

For filling:

1 lb tvorog (or farmers cheese, or ricotta)
2 egg whites
2 tbsp flour
2 tbsp sour cream
Raisins and vanilla on taste (optional)

Method:

Simple Yeast Blinis

"Blinis" is just multiple of "blin".

Ingredients:

1 lb all-purpose flour
2 cups milk
3 eggs
1 tbsp butter
1 pack yeast
1 tbsp sugar
½ tsp salt

Method:

Warm up 1 cup milk (do not boil!), dissolve yeast in it, then add all the flour and knead the dough. Set in warm place for 1 hour.
Warm up one more cup of the milk. Add salt, sugar, egg yolks.
Blend well, and add the mix into raised dough. Blend all together, and let to stand.

Blinis with assorted filling (noble variation)

Ingredients:

1 lb all-purpose flour
2 cups milk
3 eggs
1 tbsp butter
1 pack yeast
1 tbsp sugar
½ tsp salt

Method:

Warm up 1 cup milk (do not boil!), dissolve yeast in it, then add all the flour and knead the dough. Set in warm place for 1 hour.
Warm up one more cup of the milk. Add salt, sugar, egg yolks.
Blend well, and add the mix into raised dough. Blend all together, and let to stand.
Whip egg whites, and add them to a dough, blend, and cook blinis.

Asparagus and ham

Ingredients for 4:

3/4 lb trimmed thin asparagus
4 slices boiled ham
1 cup grated cheese
1 1/4 light cream
1 cup chicken broth
1 tbsp butter
1/4 tsp ground nutmeg
1 lemon
1 tsp sugar
salt and peper on taste

Method:

Bring to boil 2 cups water, add salt, sugar, and lemin juice, put asparagus, and cook for 15 minutes, ot until asparagus is tender but still firm.
Mix in small saucepan chicken broth and cream and cook until reduced by half.

Other “Southern” Salad

Ingredients:

1/2 lb sweet red pepper
1/2 lb tomatoes
1/3 lb onions
1/3 lb cucumbers
1/3 lb breadcrumbs
1/3 lb yogurt or sour cream
Salt and pepper on taste

Method:

Cut off pepper seeds.
Cut pepper into long thin stripes.
Cut tomatoes and cucumbers into medium-size pieces.
Cut onions into small cubes.
Cook breadcrumbs on a skillet until a nice aroma arises.
Mix vegetables and breadcrumbs, add salt (and, optionally, black pepper).

“Zapekanka” – Tvorog – cream wheat baked pudding

Tvorog is a product of sour milk. The closest American analog is cottage cheese with small curds, but it has a different taste.
You can buy (or at least find out where to buy) tvorog in any Russian store.

Ingredients for 2:

1 pack of tvorog (250 g). or ½ lb cottage cheese.
2 eggs
3 tbsp (or 1 pack) cream wheat, or bread crumbs
1 tbsp sugar
½ cup raisins
½ tsp baking soda
½ tsp lemon juice
Vanilla on taste
Kefir or sour cream
1 tbsp margarine
