Vegetable Gratin

Ingredients for 6:

1 medium cauliflower
1 lb carrots
0.5 lb spinach
4 tbsp sour cream
3 tbsp ground Parmesan cheese

Method:

Cut cauliflower into medium pieces, and wash. Wash spinach.
Peel and wash carrots, and slice them into thin pieces.

Bring 0.5 gal water to boil, and put the carrots in the boiling water.
After 3 minutes, put the cauliflower into the saucepan, and boil for 4 more minutes.

French Green Beans Zapekanka

Ingredients:

1/3 lb plain yogurt or sour cream
6 eggs
2/3 lb French Green beans
1 bunch Dill
¼ lb green onion
1 tbsp butter
1 tbsp bread crumbs
2 tsp lemon juice
White pepper, salt, and greens on your taste

Supplies:

An oven-safe dish with high edges

Method:

Bring ¼ gallon (1 l) water with 1 tsp lemon juice, add green beans, and boil with low-medium heating for about 20 minutes.

Cut beans into halves.

Fish Kabobs

Ingredients:

For kabobs:


1 medium sea fish fillet, de-skinned and de-boned
1 tbsp thinly cut Сoriander greens
8 stalks green onions
2 tbsp warm melted butter
3 tbsp whipping cream
1 egg yolk
Salt and pepper on taste

For sauce:

10 medium shrimps
½ cup whipping cream
0.5 tsp lemon juice
Pinch of lemon peels

For decoration:

Fried calamari rings on 2 rosemary stalks

Method:

Vegetarian Pasta

Ingredients:

1 pack any small-size pasta
1 medium eggplant
1 red onion
1 medium red sweet pepper
1 lemon
0.5 lb black olives cut in quarters
3 tbsp fresh basilica

Method:

Cook pasta as recommended on the pack.
Drain, and set aside.

Cut eggplant, peeled pepper, and onions into small cubes.

Pre-heat olive oil on a skillet, add the vegetables, and stir-fry for about 7 minutes, then add lemon peels and squeezed lemon juice.

Cooked Small Fish

Ingredients:

1 lb any small fish like smelts
1 cup vegetable oil
1 cup strong black tea
1 tbsp salt
Black peppercorns, cinnamon, bay leaves, lemon juice, salt on taste

Method:

Clean fish, remove the innards and black membranes, and put the fish in a saucepan.

Mix oil, tea, and all chosen spices together.

Pour this mix over the fish, and bring to boil with small heating under a lid.

Fish Zapekanka

Ingredients:

1 lb fish fillets
1 large onion
1 lb potatoes
1 sweet red pepper
1 medium tomato
1 tbsp spices on your taste
1 tsp vegetable oil
0.5 cup water
1 tsp salt
1 tsp mayonnaise or sour cream

Method:

Wash fish fillets, and put on a baking dish greased with vegetable oil.

Peel and wash potatoes, and cut them into thin slices.

Wash red pepper, remove seeds, and cut into rings.

Wash tomato, and slice into rings.

Lentils with different dressings

Ingredients for 2:

1 cup lentils
½ tsp salt

For dressing:

5 bacon slices or 5 tbsp vegetable oil
1 medium onion
3 garlic cloves
3 coriander stalks
½ tsp adjika

Method:

Fry bacon on a dry skillet.
Peel onions and garlic, cut into small pieces, and stir-fry with the bacon fat.
Cut coriander greens into small pieces, add to the onions and garlic, then add adjika and stir well.

Meat with Sour Cream

Ingredients:

2 lb de-boned meat
2 medium onions
2 medium carrots
1 bunch parsley greens
1 bunch Dill greens
1 bunch Coriander greens
2 garlic cloves
1-2 bay leaves
2-3 peppercorns
1 lb sour cream
Salt, ground black pepper on taste

Method:

Wash the meat, put in a sauce pan, pour hot water into the sauce pan (fill to 1” higher than the top of the meat), and bring to boil.

Remove foam, then add salt, and boil for about 25 minutes.

Simplest Fish-and-Potato Salad

Ingredients:

1 lb potatoes
1/3 lb boiled or hot smoked fish fillets (cod is very appropriate; a mix of different fish is acceptable)
1 large salt cucumber (or ¼ lb salt cucumbers)
1 medium onion
2 tbsp black olives – optional
1 hardboiled egg – optional
2 tbsp vegetable oil
Salt and fresh-ground black pepper on taste

Method:

Boil the potatoes, then cool and peel them.
Ground the potatoes, or cut them into small cubes.

Ground Beef Steaks

Ingredients:

1 lb ground beef
½ lb feta cheese (or other feta-like cheese) optional
1 large onion
Coriander greens on taste (optional)
2 eggs
Salt and pepper on taste

Method:

Put a piece of foil on the table.
Cut onions into small cubes.
Mix ground beef, eggs, onions, salt, pepper, and coriander greens (optional) together.
Divide into 4 parts.

Cut cheese into 8 same-size pieces.
